January, a month of calm after the excitement of the end-of-year celebrations

Even if the month of January is a quiet month in the world of champagne after the end of year celebrations, we must not forget that it is also the time to prepare for the year that will follow. However, the activity is quite calm which also allows the vegetative rest of the vine plants.

We do not prune our vines for most of this first month of the year to respect this period of storage. We celebrate Saint-Vincent on January 22, the date on which we have the opportunity to meet to take stock of the past year and pray that the next season will be good. We will start the days following the pruning of the vines which will continue in February and March.

What should we prepare?

To begin with, we monitor the evolution of the wines from the previous year already in the cellar. We are already apprehending the assemblies for the next draw. We assemble clear wines in test tubes in order to refine our blends. For the BSA (Brut Sans Année), we blend around 60% fresh harvest and 40% reserve wines in order to be able to find the same characteristics in these products. We design different products for the vintages (wines from a single year of harvest).

This month is also an opportunity to prepare for Valentine's Day and Easter.
