October, the month of change
The month of October lets the grapes which were not ripe during the grape harvest.
We take care of the vines by removing the diseased vines in order to replace them in the spring. A healthy vine plant can live more than 100 years if we take care of it, but it is sometimes necessary to renew it before. We do this gradually in order to maintain the optimal concentration of sugar in the grape berries.
The vine is preparing to complete its cycle. The sap begins to go back down into the ceps as the temperatures drop and the days get shorter. The changing colors of the leaves announce the beginning of autumn.
It is also a favorable period for prospecting in the vineyard. Indeed, some symptoms are more visible during this period.
In the cellar, the alcoholic fermentation that began during the harvest is now complete. If the small bubbles are not yet present in our wines, it is to prepare for the important stage of blending. Indeed, each cuvée must be prepared like a delicate cooking recipe.
For this we also leave time for our wines to express themselves in order to control the aromas of our cuvées.
